Cottage cheese in spinach curry (Palak Paneer) is such a mouth-watering dish. The Palak Paneer that we generally eat provides us with Paneer nutrition. However, spinach nutrition is somewhere wasted. It is because we overcook it. Temper it too much. But don't worry friends. Today I will show you the recipe for the healthiest palak paneer that you will ever taste. No oil. Not too much spices. 100% nutrition and taste.
Firstly, I have put water in a pan and covered it. After the water is boiled, I will put off the gas.
Now, I will rinse the spinach leaves in it and cover it with a lid.
After 2-3 minutes the spinach leaves shall be steamed. Spinach should not get overcooked, so I will dip it into cold water.
Next, into a blender, I have put 1 chopped tomato, 2-3 garlic cloves, chopped onion,
1 green chilli and spinach. You can even add yoghurt here.
Then we will blend the mixture into a fine paste.
In another jar, we will grind the cashews.
Now, we will put a non-stick pan on high flame. After the pan is heated, we will turn the flame to low.
Now, we will add the spinach paste.
Add a little turmeric, salt and mix it.
Then add cottage cheese.
You can see that the spinach colour is light green which shows that it has not been overcooked.
Add the grinned cashews.
Mix well.
Turn off the flame and cover it with a lid.
Let it rest for 2-3 minutes.
Now, Your highly nutritious Palak Paneer is ready.
